Only 5 ingredients and very easy to make so NO EXCUSES!! It's even gluten free.
INGREDIENTS
100g butter
200g 70% cocoa chocolate (or if you are worried that may cause a heart attack, normal dark or milk chocolate)
4 eggs
100g caster sugar
100g almond meal
METHOD
1. Preheat oven to 180C
2. Melt butter and chocolate in a saucepan over low heat and allow to cool
3. Separate eggs and whisk egg whites with a pinch of salt until soft peaks form
4. Gradually whisk in the sugar until glossy
5. Mix egg yolks and almond meal in to the butter and chocolate
6. Stir the chocolate mixture through the egg whites
7. Pour into a lined 20cm round springform tin and bake for 20-30 minutes until top is firm and cake is coming away slightly from the sides
This was one of the easiest chocolate cakes I've even made and whilst some have been easier, this one has definitely been the most tasty. It's nice and moist and rich but not so intense that you can only eat a sliver at a time.
