Melting Moments (recipe)


I cannot believe I've not made these earlier in my life. Melting moments are one of the most amazing biscuit experiences a person can have. They literally melt in your mouth.

Also, good news that I discovered, the recipe doesn't need eggs.

(This was good news in the context that there were no eggs in the house).

So this is from the Love Food group's 1001 Cupcakes, Cookies and other tempting treats book.




INGREDIENTS
BISCUIT
350g butter, softened (and yes, it does need to be softened, just microwave it for 10 seconds or so)
85g icing sugar
1/2 teaspoon vanilla extract
300g plain flour
50g cornflour

FILLING
60g butter, softened
2/3 cup icing sugar
2 teaspoons grated lemon rind
1 tablespoon lemon juice

METHOD
BISCUIT
1. Preheat oven to 180°C OR 350°F
2. Cream butter and icing sugar in a large bowl (cream = beat until light and fluffy)
3. Beat in vanilla extract
4. Sift in flour and cornflour and mix well
5. Spoon mixture onto baking trays, leaving room between them, and bake for 15 - 20 minutes or until golden

FILLING
1. Cream butter and icing sugar
2. Beat in the lemon rind and juice
3. Spread icing on the flat side of half the biscuits then make biscuit sandwiches


TIPS & TRICKS
  • If your icing sugar is lumpy, SIFT IT or else you will end up with lumps in your biscuits
  • If you want yours to look fancy (which mine do not because I did not use this method), spoon the mixture into a piping bag and use a large star nozzle to pipe out your biscuits
  • These biscuits can be eaten plain or, more traditionally, with a filling or either a citrus butter or mascarpone cheese


So really, it's a very simple recipe that although may not look cafe ready, tastes just like it could be.
