Found this recipe online for fabulous chocolate chip cookies. From Cookies and Cups blog.
1 cup butter, softened
1 cup brown sugar
2 eggs
1 tablespoon vanilla essence
1 teaspoon baking powder
1/4 teaspoon bicarb soda
1 teaspoon salt
3 cups plain flour
1/3 cup chopped dark chocolate
1/3 cup chopped milk chocolate
Method
1. Preheat oven to 180C (350F)
2. Beat butter in the bowl of an electric mixer until smooth
3. Add brown sugar and beat for 2 minutes until smooth
4. Add eggs and vanilla and beat until smooth
5. Beat in baking powder, bicarb soda, salt and flour
6. Stir through the chocolate
7. Roll 2 tablespoons worth of mixture into a ball and flatten onto a baking tray lined with baking paper
8. Bake for 10 minutes or until golden and firm on the top
Tastes best warm.
