Lemon Muffins with Icing (recipe)



Lemon Muffins

 


INGREDIENTS
85g butter, melted
280g plain flour
1 tbsp baking powder
pinch of salt
115g caster sugar
2 eggs
250ml milk
finely grated rind of 1 lemon

METHOD
1. Preheat oven to 200C (400F)
2. Sift flour, baking powder and salt into a large bowl then stir in the sugar
3. In a different bowl, mix together the eggs, milk, butter and lemon rind
4. Make a well in the centre of the flour mixture and pour in the wet ingredients
5. Stir gently until just combined
6. Spoon the mixture into a greased muffin tin (should make 12 muffins)
7. Bake for 20 minutes or until golden brown

Basic Icing

 


INGREDIENTS
Icing mixture
Butter, softened
Milk

METHOD
1. In a bowl, sift about 1/3 cup of icing mixture, add a few teaspoons of butter and mix together with a fork. Add a splash of milk and stir.
2. Alternate between adding more icing sugar and milk until you have the right amount and consistency.
3. Add food dyes for colour if wanted (I've made mine an orange colour by using 1 drop of red + 5 drops of yellow food dye).

Always start small with icing because more often than not you will end up with more than needed. As my mother always says, "you can add more if you need, but you can't take it away".
